Comforting Winter Leek and Potato Velouté
This winter leek and potato velouté is perfect for warming up on chilly evenings. Easy to prepare, it is both sweet and comforting.
Ingredients
- 3 leeks
- 3 potatoes
- 1 onion
- 1 liter of vegetable broth
- 20 cl of fresh cream
- Olive oil
- Salt and pepper

Preparing vegetables
Wash the leeks and cut them into rounds. Peel the potatoes and cut them into cubes. Thinly slice the onion.Bring back
In a large saucepan, heat a little olive oil. Add the onion and sauté until translucent.Cooking vegetables
Add the leeks and potatoes to the pan. Sauté for about 5 minutes.Add the broth
Pour the vegetable stock over the vegetables. Bring to a boil, then reduce the heat and simmer for 20 minutes, until the potatoes are tender.Mixing
Use a hand blender to puree everything until smooth. Add the crème fraîche and mix well. Season with salt and pepper to taste.Service
