Comforting Winter Leek and Potato Velouté

This winter leek and potato velouté is perfect for warming up on chilly evenings. Easy to prepare, it is both sweet and comforting.

Ingredients

  • 3 leeks
  • 3 potatoes
  • 1 onion
  • 1 liter of vegetable broth
  • 20 cl of fresh cream
  • Olive oil
  • Salt and pepper

Preparation

  1. Preparing vegetables
    Wash the leeks and cut them into rounds. Peel the potatoes and cut them into cubes. Thinly slice the onion.

  2. Bring back
    In a large saucepan, heat a little olive oil. Add the onion and sauté until translucent.

  3. Cooking vegetables
    Add the leeks and potatoes to the pan. Sauté for about 5 minutes.

  4. Add the broth
    Pour the vegetable stock over the vegetables. Bring to a boil, then reduce the heat and simmer for 20 minutes, until the potatoes are tender.

  5. Mixing
    Use a hand blender to puree everything until smooth. Add the crème fraîche and mix well. Season with salt and pepper to taste.

  6. Service
    Serve hot, with croutons if desired.
