Tasty Pâté with Mushrooms and Autumn Herbs

This mushroom pâté recipe is a real autumnal delight. Perfect to accompany a salad or to enjoy with fresh bread.

Ingredients

  • 300g of mixed mushrooms (button mushrooms, porcini mushrooms)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 50g butter
  • 1 tablespoon olive oil
  • 100g country bread, diced
  • 2 eggs
  • 100ml of fresh cream
  • 1 teaspoon fresh thyme
  • 1 teaspoon chopped fresh parsley
  • Salt and pepper to taste
  • Shortcrust pastry

Instructions

  1. Mushroom preparation : In a frying pan, heat the butter and olive oil. Add the onion and garlic, sauté until translucent. Add the mushrooms and cook until golden brown.
  2. Mix the ingredients : In a salad bowl, mix the cooked mushrooms, country bread, eggs, cream, thyme and parsley. Season with salt and pepper.
  3. Preheat the oven : Preheat your oven to 180°C (356°F).
  4. Assembling the pâté : Spread the shortcrust pastry in a tart pan. Pour the mushroom mixture over the pastry and smooth the surface.
  5. Baking : Bake for 25-30 minutes, until the pastry is golden brown.
  6. Tasting : Let cool slightly before serving. This pâté can be enjoyed hot or cold.

Advice

Serve it with a lamb's lettuce salad for a contrast of flavors.
