Roasted Salmon with Autumn Vegetables and Honey Vinaigrette
Introduction
Enjoy the flavors of fall with this roasted salmon and seasonal vegetables. This dish is both healthy and comforting, perfect for chilly evenings. Plus, the honey vinaigrette adds a touch of sweetness that pairs wonderfully with the salmon.
Ingredients
- 4 salmon fillets
- 2 carrots, cut into sticks
- 1 zucchini, diced
- 1 red onion, chopped
- 200 g broccoli, cut into small florets
- 3 tablespoons olive oil
- 2 tablespoons of honey
- The juice of 1 lemon
- Salt and pepper to taste
Preparation
- Preheat the oven to 200°C (400°F) .
- In a large bowl , toss carrots, zucchini, onion and broccoli with olive oil, salt and pepper. Spread vegetables on a baking sheet.
- Place the salmon fillets on the vegetables and season with a little salt and pepper.
- In a small bowl , mix the honey with the lemon juice, then drizzle the mixture over the salmon.
- Bake for about 15-20 minutes , until the salmon is cooked to your liking and the vegetables are tender.
- Serve hot , accompanied by roasted vegetables.
