Roasted Gnocchi with Mushrooms and Autumn Spices

Fall evenings call for comfort food. These roasted mushroom gnocchi are a burst of flavor while being simple to make. Perfect for warming the soul!
Ingredients
- 400g of gnocchi
- 300g of seasonal mushrooms (e.g. chanterelles or oyster mushrooms)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- Salt and pepper to taste
- Grated Parmesan for serving (optional)
Preparation
- Preheat the oven : To 200°C (400°F).
- Prepare the mushrooms : In a skillet, heat the olive oil over medium heat. Add the mushrooms, garlic, thyme and rosemary. Sauté for 5-7 minutes until golden brown. Season with salt and pepper.
- Roast the gnocchi : Spread the gnocchi on a baking sheet. Add the cooked mushrooms on top and mix well. Roast in the oven for 20 minutes until the gnocchi are golden and crispy.
- Serve : Serve warm, garnished with Parmesan cheese if desired.
Tips
- You can add fresh spinach or other vegetables depending on the season.
- For an even more pronounced taste, add a drizzle of balsamic before serving.
