Roasted Gnocchi with Mushrooms and Autumn Spices

Introduction

Fall evenings call for comfort food. These roasted mushroom gnocchi are a burst of flavor while being simple to make. Perfect for warming the soul!

Ingredients

  • 400g of gnocchi
  • 300g of seasonal mushrooms (e.g. chanterelles or oyster mushrooms)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • Salt and pepper to taste
  • Grated Parmesan for serving (optional)

Preparation

  1. Preheat the oven : To 200°C (400°F).
  2. Prepare the mushrooms : In a skillet, heat the olive oil over medium heat. Add the mushrooms, garlic, thyme and rosemary. Sauté for 5-7 minutes until golden brown. Season with salt and pepper.
  3. Roast the gnocchi : Spread the gnocchi on a baking sheet. Add the cooked mushrooms on top and mix well. Roast in the oven for 20 minutes until the gnocchi are golden and crispy.
  4. Serve : Serve warm, garnished with Parmesan cheese if desired.

Tips

  • You can add fresh spinach or other vegetables depending on the season.
  • For an even more pronounced taste, add a drizzle of balsamic before serving.
