Pumpkin Spice Pie: Autumn Comfort Food
This spiced pumpkin pie will put you right into the fall spirit. Easy to make, it's perfect for a cozy dessert.
Ingredients
- 1 shortcrust pastry
- 500 g cooked pumpkin flesh
- 150 g sugar
- 2 eggs
- 200 ml of crème fraîche
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon powdered ginger
- 1 pinch of salt
Instructions
- Preheat the oven to 180°C.
- Spread the shortcrust pastry in a tart mold and prick the bottom with a fork.
- In a salad bowl , mash the cooked pumpkin flesh until you obtain a smooth purée.
- Add sugar , eggs, crème fraîche, cinnamon, nutmeg, ginger and salt. Mix well.
- Pour the pumpkin mixture over the shortcrust pastry.
- Bake for about 45 minutes, until the filling is firm and lightly browned.
- Allow to cool before serving, ideally with a scoop of vanilla ice cream or whipped cream.
