Pumpkin Spice Pie: Autumn Comfort Food

This spiced pumpkin pie will put you right into the fall spirit. Easy to make, it's perfect for a cozy dessert.

Ingredients

  • 1 shortcrust pastry
  • 500 g cooked pumpkin flesh
  • 150 g sugar
  • 2 eggs
  • 200 ml of crème fraîche
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon powdered ginger
  • 1 pinch of salt

Instructions

  1. Preheat the oven to 180°C.
  2. Spread the shortcrust pastry in a tart mold and prick the bottom with a fork.
  3. In a salad bowl , mash the cooked pumpkin flesh until you obtain a smooth purée.
  4. Add sugar , eggs, crème fraîche, cinnamon, nutmeg, ginger and salt. Mix well.
  5. Pour the pumpkin mixture over the shortcrust pastry.
  6. Bake for about 45 minutes, until the filling is firm and lightly browned.
  7. Allow to cool before serving, ideally with a scoop of vanilla ice cream or whipped cream.
