Duck Parmentier with Autumn Spices
Introduction
Fall is here and with it, the desire for comfort food. This duck parmentier is a great way to showcase seasonal flavors while enjoying an easy and tasty recipe.
Ingredients
- 500g duck confit
- 800g potatoes
- 2 carrots
- 1 onion
- 2 cloves of garlic
- 1 teaspoon thyme
- 1 teaspoon paprika
- 100ml of fresh cream
- 50g butter
- Salt and pepper to taste
Instructions
- Prepare the vegetables : Peel the potatoes, carrots and onion. Cut the potatoes into cubes and the carrots into small cubes, chop the garlic.
- Cook the potatoes : Cook the potatoes in a pan of boiling salted water for about 15 minutes or until tender. Drain and mash with the butter and crème fraîche. Season with salt and pepper.
- Prepare the filling : In a frying pan, heat a little oil and add the onion, carrots and garlic. Sauté until the vegetables are tender. Add the crumbled duck confit, thyme and paprika. Mix well and cook for a few minutes.
- Assemble the parmentier : Preheat your oven to 180°C (thermostat 6). In an ovenproof dish, spread the duck mixture then cover with the mashed potatoes.
- Cooking : Bake for about 25 minutes or until the top is golden brown.
Serving suggestion
Serve hot, accompanied by a green salad for a touch of freshness and an ideal contrast with the richness of the dish.
