Creamy Pumpkin Soup with Delicious Fall Spices

Ingredients
- 1 kg pumpkin, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 liter of vegetable broth
- 200 ml of crème fraîche
- 1 tsp curry powder
- 1 tsp nutmeg
- Salt and pepper to taste
- Olive oil
- Pumpkin seeds (for decoration)
Instructions
- In a large saucepan, heat a little olive oil. Add the onion and garlic and sauté until translucent.
- Add the diced pumpkin and cook for 5 minutes.
- Stir in the vegetable stock, curry powder and nutmeg. Bring to the boil, then reduce the heat and simmer for 20 minutes, until the pumpkin is tender.
- Use an immersion blender to puree the soup until smooth.
- Add the crème fraîche, mix well and season with salt and pepper.
- Serve warm, garnished with toasted pumpkin seeds to add a nice crunch.
