Comforting Pumpkin Soup with Autumn Spices
Introduction
Pumpkin soup is an iconic fall dish. Comforting and rich in flavor, it combines sweetness and spices to warm you up during the October chill.
Ingredients
- 1 kg pumpkin, peeled and cut into cubes
- 2 potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 liter of vegetable broth
- 200 ml of crème fraîche (optional)
- 1 teaspoon of cumin
- 1 teaspoon cinnamon
- Salt and pepper to taste
- A little olive oil
Instructions
- In a large saucepan, heat a little olive oil over medium heat. Add the onion and garlic and sauté until translucent.
- Add the pumpkin cubes and diced potatoes, then mix well.
- Stir in cumin, cinnamon, salt and pepper. Cook for 5 minutes, stirring regularly.
- Pour the vegetable stock into the pan, bring to a boil, then reduce the heat. Cover and simmer for about 20 minutes, until the vegetables are tender.
- Blend the mixture using a hand blender until smooth. Add the crème fraîche if desired and return to the heat for a few minutes.
- Serve warm, with a little cream or toasted pumpkin seeds as a garnish, if desired.
