Comforting Fall Vegetable Stew

Ingredients
- 2 carrots, cut into rounds
- 2 potatoes, cut into cubes
- 1 squash, diced
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 leek, cut into rounds
- 1 liter of vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Herbs of Provence
Instructions
- In a large saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until golden.
- Add the carrots, potatoes and leek. Sauté for 5 minutes.
- Add the squash and mix well.
- Pour in the vegetable stock, add the herbes de Provence, salt and pepper. Bring to a boil.
