Comforting Fall Vegetable Stew

Introduction

Ingredients

  • 2 carrots, cut into rounds
  • 2 potatoes, cut into cubes
  • 1 squash, diced
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 leek, cut into rounds
  • 1 liter of vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Herbs of Provence

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until golden.
