Comforting Fall Pumpkin Chicken Stew
Introduction
Pumpkin Chicken Stew is a comforting dish that showcases the flavors of fall. Rich and flavorful, it combines the tenderness of chicken with the sweetness of pumpkin and warm spices.
Ingredients
- 600 g chicken (thighs or fillets)
- 400 g pumpkin, diced
- 2 carrots, cut into rounds
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 liter of chicken broth
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp turmeric
- Olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
- Add the chicken pieces and brown them on all sides.
- Add the carrots and pumpkin, then mix well.
- Sprinkle with paprika, cumin and turmeric. Mix to coat the vegetables and meat with the spices.
- Pour in the chicken stock, bring to a boil, then reduce the heat and simmer for 30 minutes, until the chicken is cooked and the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
