Cocido Valenciana: a warm autumn recipe
Introduction
Cocido Valenciana is a traditional Spanish dish, ideal for cool autumn days. This recipe rich in flavours and seasonal vegetables warms your hearts and stomachs.
Ingredients
- 500g of beef (shank or chuck)
- 300g chicken (thigh or breast)
- 200g of chorizo
- 4 carrots
- 3 potatoes
- 1 turnip
- 1 leek
- 2 cloves of garlic
- 1 onion
- 1 liter of chicken broth
- Salt and pepper to taste
- Olive oil
- A few sprigs of parsley for garnish
Instructions
- In a large saucepan, heat a drizzle of olive oil. Add the chopped onion and minced garlic, sauté until translucent.
- Add the beef and chicken. Brown on all sides.
- Pour the chicken stock into the saucepan. Season with salt and pepper, then bring to a boil.
- Peel and cut the carrots, potatoes, turnip and leek into pieces. Add them to the pan with the sliced chorizo.
- Reduce the heat and simmer for about 1 hour 30 minutes, until the meat is tender and the vegetables are cooked.
- Serve hot, garnished with chopped parsley. You can accompany this dish with rice or fresh bread.
