Cocido Valenciana: a warm autumn recipe

Introduction

Cocido Valenciana is a traditional Spanish dish, ideal for cool autumn days. This recipe rich in flavours and seasonal vegetables warms your hearts and stomachs.

Ingredients

  • 500g of beef (shank or chuck)
  • 300g chicken (thigh or breast)
  • 200g of chorizo
  • 4 carrots
  • 3 potatoes
  • 1 turnip
  • 1 leek
  • 2 cloves of garlic
  • 1 onion
  • 1 liter of chicken broth
  • Salt and pepper to taste
  • Olive oil
  • A few sprigs of parsley for garnish

Instructions

  1. In a large saucepan, heat a drizzle of olive oil. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the beef and chicken. Brown on all sides.
  3. Pour the chicken stock into the saucepan. Season with salt and pepper, then bring to a boil.
  4. Peel and cut the carrots, potatoes, turnip and leek into pieces. Add them to the pan with the sliced chorizo.
  5. Reduce the heat and simmer for about 1 hour 30 minutes, until the meat is tender and the vegetables are cooked.
  6. Serve hot, garnished with chopped parsley. You can accompany this dish with rice or fresh bread.
