Autumn Tacos with Spicy Chicken and Seasonal Vegetables

Introduction

These fall tacos combine the tenderness of spicy chicken with the freshness of seasonal vegetables, delivering an explosion of flavor in every bite.

Ingredients

  • 500g chicken breast, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 red pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon of cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 corn tortillas
  • Fresh coriander, to garnish
  • Lemon wedges, for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add chicken and cook until browned.
  4. Add the bell pepper, zucchini, cumin, paprika, salt and pepper. Cook for another 10 minutes, until the vegetables are tender.
  5. Warm the tortillas in the microwave or in a skillet.
  6. Top each tortilla with the chicken and vegetable mixture. Add fresh cilantro.
  7. Serve with lemon wedges for a burst of freshness.
