Ingredients
- 1 eggplant
- 2 zucchinis
- 1 red pepper
- 1 yellow pepper
- 1 onion
- 2 tomatoes
- 3 cloves of garlic
- 4 tablespoons olive oil
- Herbs of Provence
- Salt and pepper to taste
Preparation
- Preheat the oven to 180°C (350°F).
- Cut all vegetables (eggplant, zucchini, peppers, onion, tomatoes) into cubes of similar size for even cooking.
- Mince the garlic and add it to the vegetables.
- In a large dish , mix the vegetables with the olive oil, herbes de Provence, salt and pepper.
- Spread the mixture evenly in the dish.
- Bake for about 45 minutes, stirring halfway through cooking.
