Autumn Ratatouille in the Oven: Tasty Vegetables

Introduction

Ingredients

  • 1 eggplant
  • 2 zucchinis
  • 1 red pepper
  • 1 yellow pepper
  • 1 onion
  • 2 tomatoes
  • 3 cloves of garlic
  • 4 tablespoons olive oil
  • Herbs of Provence
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 180°C (350°F).
  2. Cut all vegetables (eggplant, zucchini, peppers, onion, tomatoes) into cubes of similar size for even cooking.
  3. Mince the garlic and add it to the vegetables.
  4. In a large dish , mix the vegetables with the olive oil, herbes de Provence, salt and pepper.
  5. Spread the mixture evenly in the dish.
  6. Bake for about 45 minutes, stirring halfway through cooking.
  7. Serve hot, with fresh bread or as an accompaniment to grilled meats.
