Autumn Pot au Feu: A Tasty Seasonal Recipe

Ingredients
- 800 g of beef (chuck or short rib)
- 4 carrots, cut into rounds
- 3 turnips, cut into pieces
- 3 potatoes, peeled and cut into pieces
- 1 leek, thinly sliced
- 2 stalks celery, chopped
- 1 onion, studded with cloves
- 2 bay leaves
- 4 sprigs of thyme
- Salt and black pepper to taste
- 2 liters of water
Preparation
- In a large saucepan, place the beef, pickled onion, bay leaves, thyme, salt and pepper. Add the water and bring to a boil.
- Reduce heat and simmer for 1 hour, skimming regularly.
- Add the carrots, turnips, celery and leek to the pan. Continue cooking for 30 minutes.
- Finally, add the potatoes and cook for another 30 minutes until all the vegetables are tender.
- Adjust the seasoning to your taste. Serve hot, accompanied by fresh bread.
