Autumn Pot au Feu: A Tasty Seasonal Recipe

Ingredients

  • 800 g of beef (chuck or short rib)
  • 4 carrots, cut into rounds
  • 3 turnips, cut into pieces
  • 3 potatoes, peeled and cut into pieces
  • 1 leek, thinly sliced
  • 2 stalks celery, chopped
  • 1 onion, studded with cloves
  • 2 bay leaves
  • 4 sprigs of thyme
  • Salt and black pepper to taste
  • 2 liters of water

Preparation

  1. In a large saucepan, place the beef, pickled onion, bay leaves, thyme, salt and pepper. Add the water and bring to a boil.
  2. Reduce heat and simmer for 1 hour, skimming regularly.
  3. Add the carrots, turnips, celery and leek to the pan. Continue cooking for 30 minutes.
  4. Finally, add the potatoes and cook for another 30 minutes until all the vegetables are tender.
  5. Adjust the seasoning to your taste. Serve hot, accompanied by fresh bread.
