Autumn Cassoulet: Comfort Food

Introduction

Cassoulet is a traditional French dish that lends itself wonderfully to the fall season. This comforting dish, made with white beans and meat, is perfect for an evening with family or friends.

Ingredients

  • 500 g dried white beans (soaked the day before)
  • 200 g of Toulouse sausages
  • 300 g duck confit (shoulders or thighs)
  • 150 g smoked bacon
  • 1 onion
  • 2 cloves of garlic
  • 2 carrots
  • 1 stick of celery
  • 1 bouquet garni (thyme, bay leaf)
  • 1 liter of chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  1. Preparing the beans
    Drain the beans after soaking them overnight.

  2. Cooking meats
    In a large casserole dish, heat the olive oil. Add the bacon, the sausages cut into pieces and the duck confit, then brown until the meats are nicely browned.

  3. Adding vegetables
    Slice the onion, garlic and carrots into rounds, and cut the celery into small pieces. Add them to the casserole and cook for 5 minutes, until tender.

  4. Mixing the ingredients
    Add the beans, chicken stock and bouquet garni. Season with salt and pepper.

  5. Slow cooking
    Let everything simmer over low heat for about 2 hours, stirring occasionally. Add a little water if necessary.

  6. Finishing
    Before serving, remove the bouquet garni and adjust the seasoning. Serve hot, accompanied by bread and a green salad.
