Autumn chowder with seasonal vegetables and chestnuts

Ingredients

  • 200 g of chestnuts
  • 2 potatoes
  • 2 carrots
  • 1 leek
  • 1 onion
  • 1 liter of vegetable broth
  • 200 ml of crème fraîche
  • 2 tablespoons olive oil
  • Salt, pepper
  • Herbs of Provence

Instructions

  1. Preparing vegetables
    Peel and cut the potatoes, carrots and leek into small pieces.

  2. Cooking vegetables
    In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
    Then add the carrots, potatoes and leek. Let cook for 5 minutes.

  3. Adding the broth
    Pour the vegetable broth into the pan. Add the chestnuts, salt and pepper to taste.
    Let simmer for about 20 minutes, or until vegetables are tender.

  4. Finishing
    Add the crème fraîche and herbes de Provence, mix well and heat for a further 5 minutes.

  5. Service
    Serve the chowder piping hot, accompanied by crusty bread.
